April 2008 Cake of The Month


Irene Likokas, member and artist, is a wife and a mother of two who lives and works in Brooklyn, NY. She has been painting and drawing her entire life and has studied fine art at the School of Visual Arts in Manhattan. Irene's first love is oil painting but she also taught herself almost every other artistic medium that exists. Basically, she loves working with her hands.

Irene has always enjoyed making pretty cakes on occasion, but recently fell in love with the smooth look of fondant. A little over a year ago, she purchased a package of fondant and tried it out. The rest is history. Entirely through word of mouth, she has become very busy with cake orders. Irene prides herself in making each cake unique. The extra time she might put into a cake is more for her satisfaction than a client’s.

One of Irene's cakes was published in the American Cake Decorating magazine in 2007. She was also awarded a “Best of Show”at the November 2007 Culinary Art and Cake Competition at Jacob Javits Center in Manhattan. There’s no doubt that Irene's preferred decorating medium is sculpted fondant. A fondant-covered cake is a blank canvas to her. Irene has graciously agreed to demonstrating one of her fabulous sculptured cakes at "Celebration of Sugar Artists", the New York City Cake Decorators First Day of Sharing on July 7, 2008. March 2008 Cake of The Month

Monique, a cake decorator and member, is currently a part-time Wilton Method Instructor.

Monique has always been fascinated by beautifully decorated cakes and wanted to learn how to create her own amazing cakes. She finally took the plunge and completed Wilton Courses I, II, and III at her local Michael's Craft Store.

A stay at home mom with four lovely children, Monique saw learning cake decorating as a means to economically create custom designed cakes for her family and friends. Encouraged by her instructor, Monique applied and was accepted as a Wilton Method Instructor in 2005 . When Monique is not taking care of her family or teaching the Wilton Way of Cake Decorating at her local A.C. Moore Store, she likes practicing and learning new techniques and curling up with a good book on sugarcraft.
